Winter Pineapple Mint Mojito

When there is little color outside on a blustery winter New England day, this cocktail is a welcome addition to any event.  The pineapple simple syrup can be made a few days in advance, and really helps to add a punched up flavor.

Pineapple Mint Mojito ~ serves 6

1 1/2 lbs. fresh pineapple chunks
3 Tbsp. white sugar
4 cups water

1. Place all in a saucepan and bring to a simmer.  Simmer uncovered until reduced by 1/2.  Strain into a bowl, pressing on cooked pineapple chucks to release all the flavor and juice.  This simple syrup can be stored up to 1 week in the refrigerator.

2 cups diced fresh pineapple
1 cup fresh mint leaves + 6 sprigs
2 cups Bacardi white rum
3/4 cup fresh lime juice
pineapple simple syrup
1 1/2 cups club soda
lime wheel

1. In a pitcher muddle pineapple and fresh mint.  Stir in rum, lime juice, simple syrup.  Pour into 6 glasses with ice and top with club soda.  Stir and garnish with mint sprigs and lime wheel.
