Who Needs Cake When You Can Have Buffalo Chicken Dip?

Wedding season is upon us! It is a joy for us to work with couples to design a menu that fits their unique wedding style. Since we customize every menu, brides and grooms can serve just about anything their hearts desire! From your family’s recipe to the meal you shared on your first date, our team will ensure that your wedding encompasses all the flavors you dream of serving at your wedding.

When we met Molly and Nadav, we knew that food was important to them and couldn’t wait to celebrate their special day. (We’re biased, but food is our favorite part of weddings!) They had a unique request: They love Buffalo Chicken Dip and wanted to have a ceremonial “Buffalo Chicken Dip Cutting” instead of a traditional wedding cake cutting!

We served the Buffalo Chicken Dip with our house-made tortilla chips. We call them “Oscar Chips” at Capers, because one of our long-time kitchen staff named Oscar makes them! They are crispy, salty bites of heaven. Don’t worry, the happy couple didn’t forego dessert – their guests enjoyed a doughnut wall after snacking on the spicy, cheesy dip and chips.

We’ve had many requests for the Buffalo Chicken Dip recipe, so here it is! It feeds a crowd and will be perfect at your 4th of July BBQ. If you try it, be sure to post a picture on social media and tag us so we can see!

Capers’ Buffalo Chicken Dip (for a crowd)

Ingredients:
3 Pounds Smoked and Pulled Chicken Thighs
2 Cups Franks Red Hot
½ Cup Melted Butter
8 Cups Blue Cheese Dressing
2 Pounds Cream Cheese
½ Cup Chopped Celery Leaves
2 Cups Crumbled Blue Cheese (for topping)

Method:

  1. Mix the melted butter with the Franks. Set aside.
  2. Whip the cream cheese in a mixer with the paddle attachment for about 10 minutes on high.
  3. Combine all ingredients, pour into casserole pans or large aluminum foil pans, and top with crumbled blue cheese.
  4. Bake at 350˚ for 20-25 minutes, until hot.
  5. Serve with tortilla chips. Enjoy!
