Autumn Cranberry, Macadamia Nut, White Chocolate Cookie

Autumn is my New Years.  It is a time to get back into the kitchen, and tinker at home over the weekend.  It is a great time to reorganize, light candles, and settle into some craft projects, especially baking.

These fall cookies are wonderful to have in your cookie jar.  I especially like to eat them for breakfast with a mug of warm tea.

Autumn Cranberry, Macadamia Nut, White Chocolate Cookies ~ approximately 3 dozen

Ingredients:

3 cups flour
1 tsp baking powder
2 sticks salted butter, at room temp
1 cup light brown sugar
2 eggs
1 Tbsp vanilla
1 1/4 c dried cranberries
2 cups white chocolate chips
1 cup chopped salted macadamia nuts

Directions:

  1. Preheat your oven to 350 degrees.
  2. Sift flour into the mixing bowl of an electric mixer and butter and mix until fluffy.  Add sugar and mix well.  Add eggs until combined, and then vanilla.  Add baking powder until combined.  Stir in cranberries, white chocolate chips, and macadamia nuts.
  3. Spoon 1 heaping tablespoon of dough onto a cookie sheet forming rows.  Bake for 15 minutes of until golden.  Place on a rack to cool and share.
