Memorial Day Weekend Celebration

With Memorial Day right around the corner, we have created a fun menu to serve at your holiday celebrations in honor of all of our service men and women.

We have created a delicious menu that incorporates the holiday and seasonal flavors of early summer. We are featuring our delicious Tito’s Strawberry Lemonade Cocktail, a refreshing drink on a hot day.  Memorial Day is a great day to start off the grilling season. We are featuring our Handcrafted Lamb Burgers with Tzatziki and Organic Angus Beef Burgers with Cheddar Cheese. We also love traditional baked chips and Salsa Fresca.

Tito’s Vodka Strawberry Lemonade~ Serves 6

Ingredients:

2 1/5 cups of fresh cut strawberries
2 cups of Sugar
2 cups of Water
2 cups of Freshly Squeezed Lemon Juice
2 cups of Tito’s Vodka
2 cups of Water
Fresh Mint and Lemon Wheels for Garnish

Instructions:

  1. In a medium sauce pan, combine the 2 cups strawberries, sugar and water.
  2. Let the sugar dissolve and then bring the mixture to a boil for 3 minutes.
  3. Pour mixture into a blender and blend for 2 minutes.
  4. Once the mixture is pureed, strain it into desired serving pitcher.
  5. Add the lemon juice, Tito’s vodka and water.
  6. Mix completely
  7. Serve over ice and garnish with fresh mint, lemon wheels, and remaining strawberries.

Lamb Burgers with Tzatziki~ Serves 6

1 pound of Fresh Ground Lamb
1 tsp of Fresh Dill
1 tsp of Fresh Oregano
2 cloves of Garlic
1 TBSP of Chopped Red Onion
1 tsp of Salt
Slider Buns

Instructions:

  1. In a large bowl, combine the lamb, red onion, oregano, dill, garlic and salt, mix well.
  2. Form the lamb into slider size patties
  3. Grill the patties 2-3 minutes on each side or until desired temperature.
  4. Spread the tzatziki on either side of the buns and add the lamb patty.

Tzatziki:

Ingredients

2 cups of Plain Greek Yogurt
1 TBSP of Red Wine Vinegar
2 cloves of Garlic, minced
2 tsps of Fresh Mint
1 tsp of Fresh Dill
1 Cup of finely chopped Cucumber
1 tsp of Salt

Instructions:

  1. Combine all ingredients into a medium size mixing bowl, cream well.

Organic Black Angus Beef Burger with Cheddar Cheese~ Serves 6

1 pound of Fresh Ground Organic Black Angus Beef
2 cloves of Garlic
1 tsp of Salt
6 Slices of Cheddar Cheese
Slider Buns

Instructions:

  1. In a large bowl, combine the beef, garlic and salt, mix well.
  2. Form the beef into slider size patties
  3. Grill the patties 2-3 minutes on each side or until desired temperature.
  4. Once you have reached your desired temperature add the cheddar cheese and cook until melted.
  5. Place on slider bun.

Salsa Fresca~ Serves 6

1 large Tomato, diced
1 cup of sliced tri colored Grape Tomatoes
1 medium Red Onion
1 minced Jalapeno
1 clove of garlic, minced
2 TBSP of fresh lime Juice
1 TBSP of Cilantro
Salt and Pepper to Taste

Instructions:

  1. Combine all ingredients into a medium size mixing bowl, mix well.
  2. Serve salsa with fresh baked tortilla chips.
