Jerk Chicken Lettuce Wraps with Mango Salsa
This week we are sharing our new jerk chicken lettuce wraps with mango salsa. We thought it would be fun to create a healthy, gluten free, menu item that everyone would be able to enjoy with the upcoming warm weather. These lettuce wraps are not only delicious, but are a healthy alternative as well. They are perfect for an outdoor picnic with your family and friends.

Jerk Chicken Lettuce Wraps with Mango Relish~ Serves 4
20 each Bibb lettuce leaves (about 3 heads)
2 Pounds Boneless Skinless Chicken Thighs place in large freezer bag
Jerk Wet Rub
½ bunch Cilantro
2 each Scallions
1 TBSP Grated Fresh Ginger
1 clove Garlic
1 each Lime Juiced
1 tsp Allspice
3 TBSP Olive Oil
½ Habanero Pepper
¼ cup Brown Sugar
½ tsp each Cinnamon, Clove, Nutmeg, coriander Black pepper
1 tsp Smoked Paprika
1) Place wet rub ingredients in food processor and blend till smooth.
2) Pour wet rub over chicken and refrigerate over night
3) Grill chicken, cool and slice thin
2 each Mango peeled and diced
1 each Jalapeno grilled and diced
½ Red Pepper diced
1 TBSP Fresh Lime Juice
1 TBSP Chopped Cilantro
1 TBSP Chopped Scallion
1 tsp Salt
1 tsp Ground Coriander
4) Place chicken in a lettuce cup, top with mango relish and serve. Add sour cream and guacamole if desired.
