Fourth of July Summer Kick Off

The Fourth of July is an amazing American holiday, and showcases fun summer menus. We have so much fun coming up with our holiday weekend menu. We will be featuring our watermelon mango margarita and Mexican street corn. We chose this menu because not only are the items delicious they are also a simple addition to any event. Grilled corn is always a must at any BBQ, so we thought it would be fun to make an alternative to simple grilled corn. We also love having watermelon featured in any way possible, so this watermelon mango margarita was an essential. Check out the recipes below to incorporate these menu selections at your Fourth of July festivities!

Watermelon Margarita

Watermelon Mango Margarita~  Serves 6

Ingredients:
1 cup of Silver Patron
1/4 cup of Mango Puree
1/2 cup of Watermelon Puree
1/4 cup of fresh lime juice
Sprigs of Mint
Garnish with Slice of Watermelon

Directions:

1. In a large pitcher combine the patron, mango puree, watermelon puree and fresh lime juice and whisk ingredients all together
2. Chill the pitcher in the refrigerator for 2 hours
3. Fill desired glasses with crushed ice and pour chilled mixture over ice
4. Garnish with a sprig of mint and a fresh slice of watermelon

Mexican Street Corn~ Serves 6

Ingredients:
5 ears of fresh local corn
1/4 cup of Ancho Chili Aioli
1 cup of grated Cotija Chili
Garnish with finely chopped Cilantro & Ancho Chili Flakes

Directions:
1. Place corn on the grill and cook until they are charred in on both sides (about 5 minutes)
2. Use a large spoon to evenly coat the charred corn with the Ancho Chili Aioli
3. Sprinkle coated corn with the grated Cotija Cheese
4. Serve on a wooden board and garnish with Cilantro and Ancho Chili Flakes
